Coconut oil is unique. It's different to most other dietary oils. It is claimed to have special nutritional and medicinal properties. This is because of the fat molecules that make up the oil. Yes! It's more than ninety percent saturated fat! But don't panic! Read on and your opinion may change.
All fats and oils are made up of fat molecules, which we call fatty acids. Based on the size of the molecules, there are three types of fatty acids; Long-Chain, Medium-Chain or Short-Chain fatty acids. You may also have heard of triglycerides. They are simply three fatty acids joined together. So you can have a medium-chain triglyceride (MCT), for example.
So what's the secret of Coconut oil? Well known researcher Bruce Fife N.D. puts it this way
"The vast majority of the fats and oils you eat, whether they are saturated or unsaturated or come from an animal or a plant, are composed of long-chain triglycerides. Probably 98 to 100% of all the fats we eat consist of LCT. Coconut oil is unique because it is composed predominately of MCT. The size of the fatty acid is extremely important because physiological effects of medium-chain fatty acids in coconut oil are distinctly different from the long-chain fatty acids more commonly found in our diet. So coconut oil is a medium-chain triglyceride! MCTs are easier to digest, easier to absorb and are highly nourishing for the body. Unlike the other oils which put an additional strain in the digestive system, Coconut oil provides a quick source of energy and promotes healing in the body. Interestingly enough, MCTs are also found in human breast milk.
New discoveries have shown coconut oil is a powerful weapon against heart disease. Eating coconut oil on a regular basis can reduce your risk of having a heart attack! Due to the fact that this oil is composed of unique medium-chain fatty acids, it does not have a negative effect on cholesterol.
If the coconut oil is natural and non hydrogenated, it tends to increase HDL cholesterol and therefore improve your cholesterol profile. HDL is the good cholesterol, which actually helps to protect against heart disease.
